This is one of my favorite soups in the whole wide world! I serve it with grilled cheese sandwiches made with sourdough and havarti or munster cheese.... YUMMY! It is so easy to make, it should be a crime to buy tomato soup in a can.
1 onion
6 tablespoons butter
2 cans diced tomatoes
1 can (48 oz) tomato juice
3-6 tablespoons sugar
1-2 tablespoons chicken base or 3 bouillon cubes
1 cup sherry
1 1/2 cups heavy cream
fresh parsley
fresh basil
salt and pepper
Saute onions in butter till tender. Add tomatoes, tomato juice, sugar, chicken base, salt, pepper and sherry. I use my hand blender for a smooth texture. Then add chopped herbs and cream. Simmer a few minutes before serving. Top with more fresh basil and or parsley.
