Comforting Chicken and Biscuits.

Its cold and rainy outside, a perfect evening to make some comfort food. Chicken and biscuits are my definition of comfort food.

1 small onion
3 carrots
3 stalks of celery
2 Tbls butter
1 Tbls olive oil
3 Tbls flour
2 1/2 cups chicken broth
3/4 cup half and half 
2 cups leftover chicken cut into bite sized pieces
1 tsp thyme
1 Tbls fresh parsley
cayenne pepper to taste
salt and pepper to taste
a tube a biscuit dough (I like Trader Joes because it contains no hydrogenated oil or chemicals)
1 cup cheese

Preheat oven to 375 degrees.

Chop all veggies to small pieces and saute in butter and oil. Saute for about 5 minutes till veggies are tender but still have some crunch to them. Add flour and cook one more minute. Next add your chicken broth to pan, cook till thickened. Then mix in half and half and spices. Pour into a baking dish. I like to use my cast iron skillet so I can put it right in the oven. Place your biscuit dough evenly on top of the chicken mixture and sprinkle on the cheese. Bake 20-30 minutes till biscuits are cooked through and browned on top. Enjoy and feel comforted!

Coupons Are Cool!

I like a good bargain, which if you read my blog you already know. In the past I always threw away coupons, until my sister taught me to use them. Then I started to save money, get stuff for free or even make money! Now I frequently check coupon blogs and sales it really makes coupon shopping a no brainer. It takes some extra time to plan your attack, but I think its fun and WORTH it. 

Here is todays shopping trip. This one was not as good as I have done in the past but, I had taken a break from coupon clipping for a while and this was my first one in a month or so. 

I simply matched my coupons to items on sale and use my extra care bucks at CVS. Here is what I got.


2 packages of trail mix
2 boxes of Kashi bars
1 bottle of Dawn
Crest 2 hour Whitestrips
2 Febreze air fesheners
1 Gilette razor
1 package of Bounce dryer bars
1 Crest toothpaste

For the price of the Crest Whitestrips I got all this. You could say I payed for the Whitestrips and got the rest for free! I am not going to break it down too much and bore you. But here are some cool numbers, the razor was $0.99, the Dawn dish soap $0.25, and Kashi bars $1.50 a box. The Crest toothpaste I actually earned $1, by using a $1 off coupon and earning extra care bucks for buying it. Then I asked the cashier to use the extra care bucks on my next transaction (which I did in the same shopping trip) and I used them to buy the Whitestrips. 

In total I saved over $50!!

More thrift store goodies!

Caleb does karate around the corner from a little jewel of a thrift store. Most days of the week I drop him off at karate and take a quick look around the Redwood Gospel Mission Thrift Store. They kick me out at closing time and I can watch the last half of Caleb's class. I was quite excited to find these goodies today.


Red patent leather flats by Born. The soles show no wear at all. A similar style on the Born site is $135. I got these beauties for (drum roll please?) $4.99!! Aren't they adorable? 


A Wilsons leather jacket in petite? Yes please! It looks brand new. The pictures don't do it justice, it's really cute! I have seen similar styles up to $300. This lovely was only $25, which is more than I would normally pay at a thrift store. But I know my money is going to a great cause at the Redwood Gospel Mission Thrift Store. It is a cause my church works really close with. I have seen how it changes lives and spreads Gods love. Im okay with paying a little extra for that!
